Healthy Broccoli soup Recipe

This recipe was made couple years back when I was trying to lose weight (spoiler: failed!) and was craving for creamy soup. But all cream based soups has one main ingredient-cream, and I wanted something healthier and with less fat in it. And then I stumbled upon potato trick, put a potato to boil amongst other ingredients and after it’s finished mashed it with stand mixer. It will cream up the soup without the additional fat. It is easy to make, you need only one pot and is quite tasty. This recipe serves for about three large plates, but it depends on size of your ingredients as well as portions.

Here is the recipe:




1-2 Broccoli


1 Medium Size Potato


1 Small Onion


1 Teaspoon Of Dry Basil or Italian herbs




Olive oil








Vegetable Bouillon Cube (optional)


1.       Cut the florets of the broccoli as well as stem. Make sure you cut stem into a small cubes so it can cook faster.
2.       Peel off and cut into cubes a potato as well as an onion.
3.       Put the ingredients into a pot and add water to cover everything. Cook on medium high heat.
4.       Roughly chop some parsley leaves and add into a soup.
5.       Sprinkle dry basil, and add salt and pepper to taste. Add a bit of turmeric. If you like add a tablespoon of olive oil.
6.       When it starts to boil, reduce the heat and add vegetable bullion soup. It will make it a bit tastier. You may skip this step if you don’t have bouillon cube on hand.
7.       Cook for about 40 minutes or until stems of broccoli become much tender.
8.       When it’s done remove on the side few cups of water from the pot. It needs to be thicker when you start to blend the soup and you can add the used „water“ if it becomes too thick.
9.       Blend it all thoroughly and serve. Enjoy your meal!
