Scrambled eggs with wild asparagus ingredients

Have you ever looked for effortless recipe for lunch? Search no more. This version of scrambled eggs with only few more ingredients is more than regular idea. It’s so easy to make, and half of the ingredients you already probably have in your fridge/pantry. Additional not-so-common ingredient is wild asparagus. In continental Europe they are in season right now and even though they have high price, they are easily accessible in every market. That is the type of asparagus that is super thin, almost like a branch, with a taste of nature (if that makes sense). Delicious recipe, perfect for spring and it’s done in only fifteen minutes.

3 eggs


few parsley leaves








feta cheese (optional)

1. Chop up onion and sauté it in a pan with melted butter.
2. In meantime chop asparagus in 2.5 cm (1 inch) pieces and put it in a pan with onions when they become translucent. Stir.
3. Finely chop parsley and add in a pan with onions and asparagus. Sauté for about five more minutes.
4. While that’s cooking, scramble eggs in a bowl and add salt and pepper to taste.
5. Add in a pan and scramble it all together. If you like your eggs to be little softer, don’t have it on the heat for too long. Minute is more than enough.
6.  Serve it on a plate. If you have feta cheese on hand, crumble a bit of it over your scrambled eggs. Saltiness of feta would go beautiful with this meal. Bon appétit!
